For our third experiment, Malt Master Brian Kinsman travelled to Canada to meet a renowned winemaker in Niagara. There he learned how the grapes had to be picked by moonlight at -10C to produce the intensely sweet Icewine. Upon his return to the Glenfiddich Distillery Brian started experimenting with several French oak Icewine casks from the Canadian winery, filling them with different Glenfiddich aged malts for up to six months. Only the rarer whiskies, those aged for 21 years, could cope with the extra Icewine intensity. The taste is a perfect combination of both pioneering liquids, the heightened candied sweets and oakiness of Glenfiddich are complemented by mouth-watering tropical fruit notes and a luscious sweetness from the unique Icewine cask finish. First released in October 2017, the long-awaited second batch is now available.

This exclusive Glenfiddich expression has been matured for 23 years in American and European oak casks and elegantly finished in rare French cuvée casks. The finest flavours from Scotland and France have been fused together through the art of experimentation, to redefine moments of celebration and create a new and extraordinary drinking experience.

Glenkinchie's Malt Master drew inspiration from the exquisite porcelain of China's great dynasties to create the oldest-ever Glenkinchie bottling direct from the distillery. Just as it took countless man-hours to create the precious vases of the great emperors, this rare whisky has been slowly matured for twenty-seven years to achieve an imperiously refined expression of its lush, floral flavours. A hint of fruit as the nose opens conjures an image of the apple orchard, soon joined by light touches of almond and vanilla, before lush meadow-grass aromas develop the floral theme. Smooth and pleasing in texture, the opulent and rounded taste starts lightly sweet and becomes elegantly drying, with a vibrant oaky spiciness that persists in the dry finish.

As Glenkinchie is a light and delicate whisky, it makes sense to pair it with an equally light and delicate wine finishing. The nutty quality of the wine helps to intensify the oaky character in the whisky. Slightly sweet with a molasses and caramel factor, the whisky concludes with more nuts covered in spices.

To give Original a delicious, go-anywhere finesse, Glenmorangie make it in their giraffe-high stills, then they age it 10 years in bourbon casks to absorb all manner of delectable flavours. The result is a smooth whisky which welcomes you with a rush of citrus, then holds your attention with layers of luscious flavour, from orange to honey and creamy vanilla, with bursts of peach. Glenmorangie are constantly embarking on new sensory journeys, yet they always come home to Original.

To create it, Glenmorangie gather the silky, fruity spirit from their giraffe-high stills and let it steep in American oak casks. No less than 15 years later, they transfer a portion into Oloroso sherry casks for three more years. Once 18 years have passed, Glenmorangie reunite them to create its warm balance of sweet, floral lushness. This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. There's a hint of freshly-baked sponge cake too, warm from the oven, and you'll find cinnamon again, but toasted shards this time.
